Nicole's Bio
Nicole is a dedicated registered dietitian with a passion for helping clients embrace the joy of eating while achieving their health and wellness goals. A graduate of Johnson & Wales University, she holds dual Bachelor’s degrees in Baking & Pastry Arts and Culinary Nutrition, specializing in Clinical Nutrition and Food Research and Development. Nicole further honed her expertise through a dietetic internship at Tulane University in New Orleans. Over the years, she has taught both hands-on and virtual culinary nutrition classes, sharing her knowledge and enthusiasm for food.
With a diverse background in nutrition, Nicole has worked in culinary medicine, oncology, primary care, and disordered eating. She is a firm advocate for the Health at Every Size (HAES) approach, believing that food should bring joy, no matter one’s health goals. Nicole excels in creating a supportive and inclusive environment, tailoring her counseling to respect each client’s cultural background and learning style. She’s particularly skilled in working with neurodivergent individuals, helping them make food more approachable while reaching their personal goals.
Outside of her professional life, Nicole enjoys spending time with her many feline companions, cooking for loved ones, playing games, and exploring her love for nail art. She’s also a music enthusiast, balancing her enjoyment of quiet home time with attending events like Mardi Gras or concerts with family and friends. Despite her culinary training, Nicole’s favorite foods are humble and comforting—macaroni and cheese and tacos—showing that her love for food is as approachable as it is passionate. Her creativity and love for animals shine through in both her career and vibrant personal life.
